Blue Lagoon Cocktail

This recipe will take you to the mystical Blue Lagoon in Iceland – a natural hot spring with the gorgeous blue shades and the most spectacular view of the snowy alpines.

Envision yourself emerged in the blue mineral rich hot spring sipping a delicious blue cocktail whilst appreciating the enchanting view. The perfect blend of both sweet and sour along with its astonishing electric blue colour will make this cocktail an instant favourite. It is refreshing and bluer than the bluest Caribbean sky.

Ingredients:

+ 2 lime slices

+ 1/4 cup coarse sugar

+ 1/2 cup chilled lemon-lime soda

+ 1/2 cup tequila

+ 1/2 cup blue curacao

+ 1/3 cup lime juice

+ 2 - 4 cups ice cubes

Instructions:

1. Place 1/4 cup of sugar on a plate or shallow bowl. Rub a lime slice around the rim of the glass to moisten. Roll the rim in the sugar. Discard any remaining sugar.
2. Load up a blender with 4 cups of ice. For a less icy drink, use 2 cups of ice. Alternatively you could even skip this step all together and serve Blue Lagoon Cocktail on the rocks.
3. Add 1/2 cup lemon-lime soda, 1/2 cup of tequila, 1/2 cup blue curacao, and 1/3 cup of lime juice to the blender and process on until the ice is crushed and blended. Alternative simply mix all ingredients (if serving on the rocks)
4.  Pour into a sugar rimmed glass and garnish with a lime slice.
